You can use the following instructions to update the icon for any application. I typically use this for applications I created myself using the Script Editor.
- Right click (or two finger click) on the application
- Select Get Info from the drop-down menu
- Click on the icon in the top-left corner (not the preview) to select it
- Drag a new icon onto the icon you selected
